    Vegan + GF Pumpkin Spice Bites

    These no-bake Pumpkin Spice Bites are a great snack option to fuel you through your day, and even better—they’re easy to throw together! They’re dairy-free, vegan, and can be made gluten-free if you use GF oats.⠀⠀⠀⠀⠀⠀⠀

    8 pitted dates⠀⠀⠀⠀⠀⠀⠀⠀⠀
    1/3 cup pumpkin puree⠀⠀⠀⠀⠀⠀⠀⠀⠀
    1/4 cup maple syrup⠀⠀⠀⠀⠀⠀⠀⠀⠀
    1 cup salted cashews⠀⠀⠀⠀⠀⠀⠀⠀⠀
    1 cup rolled oats⠀⠀⠀⠀⠀⠀⠀⠀⠀
    3/4 tsp. cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀
    1/4 tsp. salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
    In a blender/food processor combine 8 pitted dates, 1/3 cup pumpkin puree, & 1/4 cup maple syrup. Blend until you get a pasty texture, then scoop mixture out into a medium bowl. Next, blend 1 cup salted cashews until cashews are finely chopped (see photo). Add cashews to medium bowl, along with 1 cup rolled oats, 3/4 tsp. cinnamon and a 1/4 tsp. salt. Mix until well combined, and form into golf ball size rounds. Let pumpkin bites set in the fridge for at least an hour before enjoying. Store in the fridge!⠀⠀⠀⠀
