So let's talk about ginger cookies. This vegan recipe is a spin on family favorite recipe. And let me tell you, the vegan version was an absolute hit. They were even fluffier and softer--such an enjoyable texture. The cinnamon, cloves, and ginger in these cookies will leave you feeling warm and wonderful.
Recipe 2: Ginger cookies
- 3/4 cups shortening
- 1 cup sugar
- 1/4 cup molasses
- 1 flax egg (1 tbsp. flax meal + 3 tbsp. water)
- 2 cups flour
- 1/2 tsp. cloves
- 2 tsp. cinnamon
- 2 tsp. ground ginger
- 1/2 tsp. salt
Preheat oven to 375. Combine shortening, sugar, molasses, and flax egg in a medium bowl, beat well. Next mix in dry ingredients (flour, cloves, cinnamon, ground ginger, salt). Chill dough for 1 hour. Form dough into golf ball-sized rounds and roll in sugar. Bake for 8-10 minutes. Let cool before enjoying!
