Easy Dessert Recipes for Vegans During Holiday Time

It's the most wonderful time of the year...well erm...almost? It's always a heavily debated topic of when it is too early to start celebrating Christmas. Do we have to wait until Thanksgiving is over, or should we start singing carols now? In the end, you can probably think about it as one long holiday season, that involves a lot of loved ones, good food, and holiday cheer.


That being said, I don't think there is any debate about one thing--is it too early to start baking holiday treats? It's never too early to fill your kitchen with the cinnamon and ginger goodness that comes from a classic Christmas cookie, or to sip on a decadent cup of hot chocolate. It could even be a hot summer day, and a freshly baked batch of cookies could be just what you are looking for, because who isn’t looking for freshly baked cookies?

However, for the vegan or gluten-intolerant folks like us out there, the more communal dessert dishes that are made for everyone during the holiday season are not always friendly to our dietary needs. Below are some vegan holiday recipes, that put a vegan-friendly spin on some classic holiday dessert recipes that I love to enjoy during the holiday season. These new versions have been tested and approved by my wonderful family and me, so I hope you love them! No matter if your friends and family are vegan or not, these recipes are sure to be a hit, as well as working with your diet. Bring these to your next holiday party, or eat the whole batch yourself!

Vegan Holiday Hot Chocolate
 
First and foremost, let's talk about holiday hot cocoa. Hot chocolate is one thing I can't go without during the holiday season. Whether that means drinking it while out and about shopping for presents, or curled up with a mug watching Christmas movies, it's such a wonderful treat. And it’s so simple to make it vegan-friendly too!

Recipe 1: Hot cocoa
- 1/4 cup cocoa powder
- 2-4 tsp. sugar depending on desired sweetness
- pinch of salt
- 1/4 cup water
- 2 cups almond milk (can sub milk alternative of choice)
- dash of vanilla
 
Combine cocoa powder, sugar, salt and water in a medium pan and simmer over medium heat until cocoa and sugar are dissolved. Add in 2 cups of milk and bring to a simmer again. For extra flavor, add in a dash of vanilla before enjoying. Serve with your favorite vegan marshmallows or some coconut whipped cream.
Vegan Holiday Ginger Cookies
 
Next let's talk about holiday ginger cookies. This vegan recipe is a spin on family favorite recipe, and let me tell you, the vegan version was an absolute hit. They were even fluffier and softer than their non-vegan counterparts--such an enjoyable texture with all of the vegan characteristics that you are looking for! The cinnamon, cloves, and ginger in these cookies will leave you feeling warm and wonderful for the holiday season.

Recipe 2: Ginger cookies
- 3/4 cups shortening
- 1 cup sugar
- 1/4 cup molasses
- 1 flax egg (1 tbsp. flax meal + 3 tbsp. water)
- 2 cups flour
- 1/2 tsp. cloves
- 2 tsp. cinnamon
- 2 tsp. ground ginger
- 1/2 tsp. salt
 
Preheat oven to 375. Combine shortening, sugar, molasses, and flax egg in a medium bowl, beat well. Next mix in dry ingredients (flour, cloves, cinnamon, ground ginger, salt). Chill dough for 1 hour. Form dough into golf ball-sized rounds and roll in sugar. Bake for 8-10 minutes. Let cool before enjoying!
