If you don't have time to grab a baking mix from us~ then your second best choice is this vegan and gluten-free Dark Chocolate Peanut Butter Cookies recipe. They're SO simple + way delicious. Decadent, soft, balanced and chewy. This recipe makes for close to 18 cookies using tbsp!
▴ 1 cup peanut butter, or allergy-friendly sub
▴ 1 tsp baking soda
▴ 3 tbsp flour (I used oat, all you need to do is blend up oatmeal)
▴ 2/3 cup cane sugar
▴ 4 tbsp applesauce
▴ 1 tsp pure vanilla extract
▴ pinch of salt
Combine dry ingredients in a mixing bowl.
Add in wet ingredients.
Stir to form a dough. Using tbsp, scoop dough and roll into ball. press down.
Bake in a preheated oven (350F) for 8 minutes.
The cookies will look uncooked but let cool for at least 10 minutes before removing from tray! They'll firm up.
