Vegan Spinach Artichoke Dip

Looking for the perfect vegan appetizer to bring to your next holiday party? This spinach artichoke dip is the perfect option, and the recipe is sure to be a hit with your friends/fam/coworkers. Dip some veggies, crackers, or pretzels in it, or smother it on a fresh baguette—either way, its the appetizer that you didn’t know you needed in your life. vegan artichoke dip

Ingredients:

-1 1/2 cups cashews

- 1/4 cup nutritional yeast

- 3 tbsp. lemon juice

- 1 1/2 tsp. salt

- 3/4 cup water

- 3-4 cloves garlic (depending on desired garlic level)

- 1 10 oz. package frozen spinach

- 1 can artichoke hearts, pepper to taste

 

Recipe: 

- In a blender or food processor, pulse cashews until ground into small pieces

- Next add nutritional yeast, lemon juice, salt, and water to the cashews and blend until a smooth consistency

- In a medium bowl, combine cashew cream sauce from blender, minced garlic, **thawed spinach, and chopped artichoke hearts

- Season with pepper as needed

- Optional but highly recommended bake for about 15-20 mins at 375 :)

** Make sure frozen spinach is thawed and squeezed dry prior to making recipe
